Hi my fellow FC's. I have been wondering how you design the flowers inbetween the cake tiers? Any help is greatly appreciated. Have a GREAT weekend!

I have used igloos for inbetween the layers. I think these type of cake flowers take a lot of interaction with the bakery. You need the exact layer sizes and they have to be there with you to assemble the cake after the flowers have been inserted. I usually do 80% of the flowering ahead of time and then finish filling the holes onsite, after the bakery has assembled the layers.

BIG MONEY!!!!!!! Every time I do one of these cakes, I walk away thinking, I did not charge nearly anough money for this!!!!

I agree with Amy, after finishing one I never think I charged enough. I have done with the igloos but now I use the Oasis floral glue & make them like corsages & just cut out a piece of waxpaper to sit the flowers on in the middle. That glue is awesome & makes my life easier because I can make them ahead & just place them on the cake when I get there only problem is when the wrong dimensions are given. Bring your glue tube with you!!

What do you do about water leaking from the bottom of the igloos. I'm always watering them because they seem to dry out so fast. Then the bottom is wet and they drip.

I always use a clear plastic liner smaller than the cake top, cut it down but leave a small lip around the edge for leakage, and then hot glue dry oasis to the liner. I drop it into a bucket to soak up and then design so it covers the edge of the plastic. One guy I worked for used the white tops off the cans of Design Master and added Oasis.

I use the plastic liner method. First call the cake people and find out the diameter of the layers and where the columns will be. I cut a template out of brown paper and build most of it in the shop. Last cake I did had 5-6"tall layers with 6" of flowers inbetween and on top. It was a BIG cake, came with a floral budget of $625. Must say when it was all done it was amazing.....just glad it stayed put and nothing happenend to it.

we have worked with cake people who wanted us to use the design master caps - they were comfortable cutting holes in the cake. We have also worked with cake people who just tell us dimensions and leave it to us........if the layers are less than 4" we use polyfoil around a piece of extra oasis.........greens lay down over polyfoil...we can slide into layer and add the extras needed to come around pillars.
But I have been known to insist that I be present when they arrive with the cake because some of the cakes I've had to make look level with my flowers.......!!!!

Do the majority of you physically place the flowers on the cake or do you leave that up to cake baker (pastry chef - not sure what to call them!) ?
While I normally prefer no one else touching my flowers - I don't put flowers on the cake. I was delivering flowers to a reception once where a helper knocked a cake layer off the table onto the floor. It scarred me for life. I have visions of destroying the cake - now I make everything at the shop and present it to the cake people. Wondering if therapy will help me get past my fear.

After a few years in this business, we all need Therapy. lol

30yrs and I still hate to touch the cake. We've had the occasional tilting cake but nothing worse than that. I prefer to deliver the flowers to the baker for their placement or we'll deliver to the reception site again for the baker to place on the cake.
Rarely we find someone who won't touch our flowers for the same reason that we don't want to touch their cake. It's become a stand off at times, but we'll back down when necessary.
I will let the Bride know upfront that we don't touch the cake and she'll usually take care of relaying this info to the baker. It always works itself out.
That said, this past weekend we had a four layer cake with assorted placements of cymbidium orchids. It wasn't hard and looked great when it was done.
