Fruit in Arrangements Question

This may be a silly question, but I've always wondered.

If you make arrangements with fresh fruit (sliced or whole), do you put the finished arrangement back in the cooler?

I've always been afraid of the ethylene gas so I've kept the arrangements out at room temp. I've noticed that three days at room temp and the fruit starts to rot and the flowers go quickly after.

If you send these out for delivery have you had any bad reports? Has anyone done a test for longevity? Eric, I hope you put your two cents in here because I know you do beautiful arrangements with sliced fruit.

There should be no reason to fear putting a finished piece with fruit in the cooler. It's when you store fruit that is rotting that is were you have problems. A bucket of old smelly water from left over flowers will cause more problem than fruit.

I was told etheylene cannot produce above 37 degrees.

Now, with that said, I have a question too..

Don't 'cha have to have a special food handlers license to sell those?

I'm not talking about fruit baskets. I'm talking about arrangements with sliced fruit like this gorgeous one from Everyday Flowers:

Nobody is eating this fruit, therefore it is not food.
 
No it won't hurt unless they are apples, and also if you do pears make sure that you put a little lemon juice in the water so they don't turn brown..
