I'm a big gardener as well as a floral designer, and decided to test the life of fresh cut mint & sage from my home garden. I never thought of using this in a Vase and it was still perky and green in the vase at a room temp. of about 75 degrees for a week! Surprised me.
If your in the right zone for these plantings, go for it. They spread pretty fast and right now I'm pulling some out cause it's trying to take over the entire perennial garden.
 
Isn't the mint fabulous? I have an entire bed of the stuff around my front door, it just lasts and lasts. I also planted a test patch of french lavender this spring and have let it bloom out before cutting. I cut a bloom 2 weeks ago and put it in a jar of water, it is still blooming out.

I love lavender, but have killed every plant I have had in the garden. It's just so refreshing to see in arrangements. There's a beautiful lavender farm a few miles away, I'm buying more plants, this time from the lavender farm.
 
Mint is great! I love it.

Sage can get wilted quickly. If anyone has a tip for sage, let me know.
It's especially bad in wearables.
 
I love testing things from the garden and also potted flowering plants like begonia, geraniums, and kalanchoe.I did a hot pink double geranium corsage once .
I'm always on the look out at the garden center for unusual vines or flowering plants that I can try out.
I try them in arrangements on my kitchen table and if they last for a week or more I know they are OK.
Kalanchoe can last up to a month. I use it a lot if I can't get bouvardia because it has a similar look although a bit smaller.I also use Kalanchoe in bridal bouquets like the bridal bouquet and attendants bouquets I have attached here.

I have used sage in vase arrangements and in foam boc holders for weddings ( ask about fragrance issues tho)

would not use it in body flowers - I have not had good luck with it holding. (trial and error)

The sage has to be mature - I never cut any in early spring when it is just greening up but waite till after the blooming period (june). It does not like to be out of water for any period of time. When I process I cut and put in water then at the shop, clean and cut again and into presv and water. HTH.

I have also had good luck with marjoram.

Does anyone grow scented geranium? I have a couple of bushes I steal from, it is great for wedding work, it smells really good and holds up well.
 
I used leaves from my Wine & Roses Wiegela once when I needed brown/bronze for a corsage. I loved the color so much that now I cut and use the branches sometimes in vased & foam arrangements.

I use lemon balm & marjoram a lot too. I love the visual interest it gives and people are pleased to see something a little "different".

I also used little sprigs of rosemary in an Italian family's wedding bouts. The guys loved it.
