Just wondering if you still use a cake topper to arrange or if you just provide loose flowers for the baker to lay on the top.

Seems like my brides just want loose flowers

I would never lay flowers directly on a cake. Too many herbicides and pesticides reside on those flowers to put them on something someone's going to eat. I always glue flowers to a square or strip of acetate ribbon and let the baker lay that on the cake. That way only the ribbon is touching the cake.

It depends on what design the brides want. I have had lots of brides who wanted flowers directly on their cake and completely complaint free. If they want the flowers actually inserted into the cake, I use corsage tape to cover the stem.

I've had brides who wanted just one hydrangea on the top. I had one bride who wanted tulips to trail down from the top so I couldn't put that in a dish. Had another one that wanted a large gerbera daisy on top in front of their initials.

From a 2009 FC post entitled Wedding cakes and floral design go hand in hand written by a designer AND baker: "Please do not stick stems directly into our cakes! Not only do we put a lot of effort into making our cakes look great on display, but we also like to insure that the insides are pretty when the cake is cut. Stems ruin that effect, and can make for very messy slices. Also, would you lick the inside of a floral bucket, even one that contains only organic flowers? Neither would I!"

Elinor's quote about licking the inside of a bucket brings another tip to mind.......not related directly to cake toppers, but rather cleanliness of flower buckets. We tell people here........our flower buckets need to be clean enough that if we asked you to take a drink from it......you would. If the bucket is not clean enough for your mouth, then it isn't clean enough for the flowers.

This needs to be directed to the bride who is the actual customer. If cake designers feel that flowers ruin their cakes "look" it isn't up to the florist to tell the bride. My job is to do what the bride tells me she wants. By the way, isn't the cake ruined and messy when they cut it?

In our area almost all florists just stick the flowers right in the cake. You can get a better look and the venues just cut around the part where the flowers are inserted and throw that part away. I would say that is just the common practice in So Cal. I always laugh when brides ask nervously if we put the flowers right in the cake....
