Anybody making Christmas candy?

Last year I went nuts and made fudge, fairy food, turtles and a couple different kinds of cookies. Keep in mind I don't usually bake, hardly ever. I just got into Martha mode for some reason. It was kind of stressful and not that fun. I don't know what I was smoking.

This year I made (and am gonna make more) mini pies in 8 oz. canning jars. The link I am posting has a "scratch" pie crust recipe but I just used a box of Krusteaz and peach pie filling; it was super easy and got rave reviews from the fam. You could also make mini pies in muffin tins.

And finally, a cookie tip I got from listening to "The Splendid Table"; Make your dough ahead and let sit in the fridge for 24-36 hours and your cookies will be firmer and brown better. :)

went to a cookie exchange a couple weekends ago and I made Coconut chocolate Cheesecake balls. They were really good, had pineapple, cream cheese and melted white chocolate blended together then chilled and formed in balls. rolled the balls in shredded coconut. YUMMY!
Everyone's sounds soooo good right now!
 
We've been baking like crazy around here!!! It generally starts when Lynn calls up reminding me to get baking for the Christmas open house for the shop. This year we thought we try out some new cookies. I think everything was a hit :)
Our list:
- Lemon icebox cookies
- Ginger Cookie Press Cookies
- Buckeyes
- Whipped Shortbread
- White and Dark Chocolate Bark with cranberries and toasted almonds
- Chocolate Mint cookies
- Thimble cookies
- Nanaimo Bars
- Individual cheesecakes

Jaedyn and I also made Nana Sutton's shortbread and butterscotch gingerbread cookies....

So that's what we made this year :)

This is the easiest recipe of candy sort of like peanut butter fudge

Melt one pack chocolate chips in double boiler. Stir in salted peanuts (the kind with no skin) Spoon onto wax paper to cool. They are unbelievable.

THAT sounds sooo good right now...ok I think I'm just craving sweets since I feel like poopie.
 
Heard this super easy recipe at my card-making class yesterday.

Take those square lattice-like pretzels and place a Hershey's kiss on top of each one. Line them up on a cookie sheet and heat until the kiss becomes soft (OK, guys keep this thread clean). Remove from oven and push an M & M into the top of the Kiss. The ladies in the class were raving about how easy and good they were.

I love those!

I have also done it with round pretzels, rolos and then put a walnut half on top of it when it gets soft. One tip I would mention is to use wax paper on the cookie sheet so the chocolate doesn't stick to the pan.

I make melomacarona(honey cookies),dipped in honey and covered with crushed walnuts,and kourambiedes,somewhat like shortbread with almonds and covered with icing sugar.Both are traditionally Greek,and it would't feel like Christmass without them.Have a merry christmass all of you guys and a profitable for all of us.

Shannon, you're killing me with these threads...first the canning one which totally still has me craving good homemade preserves, now the candy/cookie thread. My measely box of frickin' oreos are just not going to cut it. This is torture!!!!!!!!!!!

I think I might start baking, as soon as I get my Christmas shopping done, finish going to all the @@@@ school plays/concerts, get the holiday cards written, addressed and sent, then finish greening the store specials, writing the email blast, shopping for the 3 token fruit baskets, answering email, dodging vendor calls for money, calling my own deadbeats to send us money, balancing the checkbook...oh,yeah and shopping for Christmas dinner (ok, calling my favorite store and ordering their homemade goodies which I will transfer into my bowls and claim as my own)! Now I need a nap!!!!!!!!!!!!!

The next time you start a thread that is going to make me sad, guilty and jealous. PLEASE send me a little snack to hold me over!

Well, this update ought to make ya feel better....

So I had decided to bake cookies this past Saturday, I had to go to work instead. I wasn't scheduled to work, but decided to go in because we got a casket spray and it would have been too much for the girls to deal with funeral stuff and Christmas.

So I thought "No problem, I'll just get it all done on Sunday" uh, nooo.

I had already made the chocolate covered cherries about a week ago, and started on the coconut bars and the peanut butter ritz..

So Yesterday I did make BigTed's peanut clusters, YUm! and I make rocky road, the haystacks, finished up the coconut bars and and finished up the white chocolate peanut butter ritz. Then I feel asleep on the sofa while taking a break and watching the Andy Griffith show. So much for the cookies!!

Sometimes ya just can't do it all.

Connie, thats a great variation on the one I do.

I use the lattace pretzels, then put a rolo candy on the top. I put them on waxed paper in the microwave, just enough to barely soften, but so they still keep their shape. Once they are shiny and barely soft, you press 1/2 a pecan in the top, and the rolo squishes down into the lattace pretzel. They look amazing, and really impressive. Its great when you have no time!
