Beth care to share the beef and barley recipe???

I'd be glad to. Just talked to hubby about it. This is how he makes it. You can add more or less of anything.. it's very free-form.

Barry's Beef and Barley Soup

2 Tbsp. oil
1.5 lbs. beef stew meat
1 medium onion, chopped
3 large carrots, sliced
3 large ribs celery, sliced
1 cup mushrooms, sliced
1 cup green beans, cut 1" long
2 quarts Swanson Beef Broth
1 cup barley
1/4 cup ketchup
1/4 head green cabbage, cut into 1" cubes

Brown the meat in the oil in a large stockpot or dutch oven over medium-high heat. Lower heat to medium, throw the onions and celery in with the meat, cook and stir about 5 min., until softened. Add all remaining ingredients, except cabbage. Bring to a boil, then reduce heat and simmer for at least 1 hour. We usually cook it about 2 hours.. the meat gets so tender! Add the cabbage during the last 15 min. Serve.

We have a "shop" crockpot--we all take turns bringing stuff to put in it.

Last week, I dumped in a bone-in turkey breast, chunked onions and a big can of fat free mushroom soup and seasonings. Not elaborate but boy was it yummy. We ate it for a couple of days!

Beef and cabbage soup is another fave--browned ground beef, box of beef broth, can of consomme, chopped up head of cabbage,chopped onion. Basil, oregano, salt ,pepper --done.
 
OK I just made an AWESOME dinner right now. It is meatballs and spaghetti but the meatballs are huge! It was so good... I made my own spaghetti sauce, my own meatballs (ground beef, onions, bread crumbs, egg, basil, oregano, black pepper, garlic salt) but not my own pasta. Too much work there!! Anyhow, the meatballs I browned in a skillet with olive oil. Then poured all the ingredients for the sauce on top and let cook for another 12-15 minutes on a low-medium flame. The whole process took me about 30 minutes-prep and cook. Yuuuummmm!

My guests can't believe how beautiful my pots and pans are.....well, that's because they are never used.

I am a great eater and am enjoying reading about all the great food.

Wow these sound delicious. Do you use liners for the crockpot? We just discovered them and I love not spending an hour scrubbing the pot.

My mom gave me a book called Make-A-Mix Cookery from 1979 a few months ago. It has tons of basic recipes that then can be translated into a ton of quick recipes. It has transformed the way we eat! I pick one day out of the month and prep the basic stuff and then we eat amazing well for the rest of the month.

I would be happy to copy and send over some recipes (as long as we keep it on the hush!).
 
No I don't use liners...never have. When I'm done with it what I do is soak it in the sink with very hot water and some ivory dishwashing soap, if there is some stuck on stuff. Usually though I wash it right after dinner so it's not on there too long. It comes off rather easy.

Yes please... I'm very good at keeping secrets. I mean the lingerie company took their name from me and my ability to harbour a cespool of secrets.

I have purchased a huge, and I do mean HUGE, cooker/roaster. I don't remember how many quarts it holds, but you can cook an entire turkey in it. I really did not mean to get such a large one, but decided that I'd just make huge lunches and we'd have, maybe leftovers for whoever is still around for supper.

Here's my list for the week:

Monday--Chicken and Dumplings (one of the staff will do this one)

Tuesday--Chicken and Rice (or whatever my daughter decides to do)

Wednesday--"Mexican Soup"

Thursday--"Dr. Martin's Mix" (basically sausage & rice)

Friday--Potato Soup w/ Smoked Sausage & cheese

Saturday--Beef (or whatever meat is on sale) Vegetable Soup


Come on by and have a bowl with us! Elmo, you can even send Jimmy by if you want to. lol
