Tonite, we start a new thread on your favorite recipes we can use for the up coming holidays or year round.

Dessert:

Chocolate Caramel Pecan Cake

Ooey…gooey…nutty, another decadent chocolate treat.

1 bag, 14oz/397 gr. pkg Kraft Caramels (about 75 Caramels)

1 Can 300ml, sweetened condensed milk

½ cup of butter

2/3 cup Crisco Oil

4 squares Baker’s Unsweetened Chocolate, chopped

1 ½ cup of water

2 cups of granulated sugar

2 large eggs

2 ½ cups of all purpose Flour

1 tsp salt

1tsp baking soda

2 tsp of vanilla

1-½ cups of coarsely chopped toasted pecans

Heat Oven at 350*F. (180*C).

In a heavy saucepan, combine caramels, sweetened condensed milk and butter. Over medium heat, cook and stir until Melted and smooth. Set aside.

Heat oil and chocolate in large saucepan, or microwave in large microwave bowl at MEDIUM for 2 minutes, or until melted. Add water, sugar, eggs, flour, salt, baking soda
And vanilla to chocolate mixture. Beat with a fork until smooth and creamy, about 2 minutes.

Spread ½ of the batter into a greased 13” x 9” cake pan.

Bake at 350*F for 15 minutes or until centre is set.

Remove from oven, spoon caramel mixture evenly over cake. Spread remaining batter over caramel layer.
Sprinkle with nuts. Return to oven and bake 40 minutes, or until cake springs back when lightly touched.

Cool completely before cutting.

Helpful hints: To unwrap easily, put caramels into freezer for 30 minutes.

Luc’s Note: When it says to melt caramel with butter and milk, do it at medium heat slowly so the mixture do not burn. I usually melt my butter before putting my caramel so it doesn’t stick to the bottom. A non-stick saucepan would be good for this if you have one.

This cake is like eating a brownie cake on top and bottom with caramel filling in between. When it is cooled, I usually cut the pieces up and put them in a Tupperware and freeze it until I am ready to use. You do not need to have pecan on the cake to eat it. I have done both way and either one is delicious.

This is a nice recipe that you can do with your daughter one afternoon. There may be some fighting on who will lick the caramel saucepan and spoon.

Spectacular Spinach Dip

OK Luc...This is my favorite spinach dip recipe. We make it every Christmas Eve! Don't try to save calories and fat by using **light or reduced fat** for any of the ingredients! You can indulge a little during Christmastime! This dip is easy to make and very yummy!

16 oz. sour cream
1/2-3/4 cup mayonnaise
1 cup shredded extra sharp cheddar cheese
1-2 pound rye, pumpernickel or half & half bread
8 oz. pkg. frozen chopped spinach (defrosted)
1 pkg. instant vegetable soup mix

Squeeze excess water from spinach. Mix sour cream and mayonnaise. Add cheese and soup mix and blend well. Add spinach and let stand one hour. Cut out center of bread, leaving a bowl shape. Cut the center piece removed from the bread into 1 inch pieces. Fill center of bread with dip. Serve the cut 1 inch pieces of bread for dipping.

I also serve this dip with veggies and our favorite crackers!

I have a appetizer that I will post soon just for you.
Easy to make, done in 1 hours in a crock pot, takes less than 5 minutes to prepare and the people will rant.

5lbs bottom round (cut into 1" cubes)
16oz jar giardinara (hot or mild-whichever you prefer)

Put meat in crockpot and pour giardinara over the top. Cook on high for 5 hours then low for 5 more hours. Every couple of hours give it toss. Roughly hour 5 the meat will start to break apart. When it's finished you'll have a beautiful pot of shredded beef with exceptional spices.

Wow that caramel pecan item sounds way too good to be true. I, however will not be trying it. I love to bake and cook, but hubby is having gastric bypass surgery on December 3rd and I will be going on a big fat diet with him. I will have the luxery of eating real amounts of food where he will only be able to eat 2-3 oz at a time. It will be a big and very needed change in my house and my family. We are all overweight some of us more tha n others and everything we all do revolves around food. I do hope I have to go to someones house over the holiday, then I will try it and leave it at the house it goes to. Thanks for the new recipe.

This would probably work with pork or chicke breast. Fowl is usually a bit tougher and doesn't shred so great...

My hubby does something like this with pork tenderloin, and thinned out BBQ sauce - it's incredible. Now that it's finally cold in NJ, I'm going to have to put in my request ..... yum.

Thanks, I'll give it a try. :) I haven't eated red meat since 1996 and am always on the lookout for tasty and healthy alternatives. Especially now since I've lost the 50 pounds.

I'll let you know how it tastes after I give it a shot.

BF (before flowers) I made cheesecakes and pastries and sold them around town and to a couple restraunts..one in Tahoe! (excuse me while i break my arm patting my self on the back, ha ha) anyway..

OMG did I see SNICKERS CHEESECAKE???

So funny, I've been cooking like mad this week, temp finally went under 80 so I've made pork loin roast, pea soup from scratch and 2 loaves of challah all just in the last 2 days! LOL that 35 lb weight loss won't last long if this continues. Maybe we need an easy excercise thread to go with this one! I'm walking 2 1/2 to 5 miles every day-but could up the ante for that snickers cheesecake...hope you share!
 
Cheddar Cheese Spread

1 pkg cream cheese
1 pkg soft cheese cold-pack cheese like McCarens.
2 1/2 tbsp lemon juice
2 tsp tabasco
2 tbsp garlic powder
1 tsp cayenne pepper
1 tsp chili powder

Combine all the ingredients and process until smooth. Serve with crackers or nacho chips.
